Buffalo Chickpea Salad Sandwich

As a hot sauce fanatic and lover of spicy things, one of my favorite spicy sauces is buffalo sauce. Whether making buffalo cauliflower wings, drizzling it on a baked potato, dipping french fries in it or making buffalo tempeh. I’m always looking for new things to do with buffalo sauce.

This is what brought me to making a buffalo chickpea salad sandwich. I was hungry and had a craving for buffalo sauce. This is a quick and easy meal that you can whip up in a short matter of time. It’s spicy but it’s cooled down with cucumbers and a garlic, dill, and chive sauce. I ate these sandwiches for two days in a row, they’re awesome!

Buffalo Chickpea Salad Sandwich

Prep Time & Assembly: 15 mins

Servings: 4

Ingredients:

8 pieces of gluten free bread of your choice, toasted (I used Little Northern Bakehouse)

24 cucumber rounds, thinly sliced

Buffalo Chickpea Sandwich Filling

1 16 oz can of chickpeas, drained and rinsed

1 celery stalk, chopped

1/4 cup vegan mayo (I used Just Mayo)

1/4 cup Frank’s Red Hot or hot sauce of your choice

2 tbsp vegan butter, melted (I used Earth Balance)

sea salt and pepper to taste

Garlic, Dill, & Chive Sandwich Spread

ranch sauce

1/2 cup vegan mayo

1 tbsp dill, chopped

1 tbsp chives, chopped

1/2 tsp garlic powder

1/2 tsp onion powder

sea salt and pepper to taste

optional: dash of smoked paprika

Start by adding the chickpeas to a medium sized bowl and add in vegan mayo. In a small bowl combine the melted butter and Frank’s Red Hot sauce and stir to combine and then add to the bowl with the chickpeas. Grab a potato masher and mash till you have the consistancy of what looks like tuna salad. Add in the chopped celery, salt and pepper to taste and give it a stir to combine.

To make the sandwich spread add the vegan mayo, garlic, onion, chives, dill, smoked paprika, salt and pepper to a bowl and stir to combine.

To assemble the hotness that is this sandwich, take your toasted bread and add the buffalo chickpea salad to it, then layer on six pieces of cucumber, on the top piece of bread smother it with the sandwich spread and put that on top of the layer of cucumbers. Dig in and enjoy!
