Caramel Apple and Peach Oatmeal

Let’s talk date caramel; it is luscious, decadent and takes your boring old oatmeal to another dimension. I’m a big oatmeal fan, sometimes I like it simple and sweet and other times I like it a bit amped up. For the fruit topping on this oatmeal, the best way to slice up the apple and peach for this recipe is to use a mandolin to get paper thin slices. Then you’ll toss them with the deliciousness that is date caramel. If you don’t have a mandolin, just slice the fruit as thin as possible.

I’d been thinking about trying to make a caramel apple oatmeal for a while now. I had some extra peaches laying around so I put those in there too and was not disappointed. Now I kept the fruit raw but I think you could also sautee the apple and peach in a plant based butter with cinnamon and then toss with the caramel as well.

Caramel Apple and Peach Oatmeal

If you’ve never had date caramel you’re in for a treat! Be prepared to lick the food processor bowl when you’re done making it.

Number of Servings: 2


1 cup gluten free rolled oats

2 cups of water

1/4 tsp sea salt

1 gala apple, sliced paper thin (1/16 inch on mandolin)

1 peach, sliced paper thin (1/16 inch on mandolin)

Date Caramel:

1 cup dates, pitted

1/3 cup of water

1/4 cup maple syrup

1/4 cup coconut oil

1/2 tsp vanilla extract

1/2 tsp cinnamon

1/2 tsp ginger

You’ll want to start by slicing up your apple and peach into paper thin slices either using a mandolin or a knife.

Next for the date caramel you’ll add the dates, water, maple syrup, coconut oil, vanilla extract, cinnamon and ginger to a food processor and blend until smooth. Once nice and smooth, place your fruit and caramel into a bowl and toss until well coated. Set aside and let the fruit soak in the caramel.

For the oatmeal fill a medium sized pot with the 2 cups of water and sea salt and bring to a boil. Add in oatmeal and reduce to low and cook for 10-20 minutes. Follow the directions on what your rolled oats package says, directions may vary.

Once the oatmeal is cooked, grab a bowl and fill it up with oatmeal and then smother it with your caramel apple peach topping. Dig in and enjoy!
