Chopped Greek Salad

There’s something about a chopped salad that just tastes better to me than a normal salad. Don’t get me wrong, I love me some salad, but something about the symmetry and food poetry of the chopped salad speaks to me.

I’m a big fan of Greek salad and I love chopped salads so I decided to combine the two and dress it with a roasted red pepper Greek style dressing. I also recently discovered Violife vegan feta and it tastes awesome in this salad. You could make the salad without the vegan feta but if you can find it it’s delicious.

Chopped Greek Salad w/ Roasted Red Pepper Greek Dressing

Prep & Assembly Time: 15 mins

Servings: 6


1 head of romaine lettuce, julienned or chopped
2 medium sized beets, chopped (I used Love beets which come cooked and are gluten free)
8 oz violife vegan feta, chopped into cubes
1/2 cucumber, chopped
1/2 red onion, chopped
1/2 cup tomatoes, chopped
1/4 cup kalamata olive, chopped
1/4 cup banana peppers, chopped

Roasted Red Pepper Greek Style Dressing

1/2 cup olive oil
1/2 cup apple cider vinegar
1/2 cup jarred roasted red peppers
1/2 tsp dijon mustard
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp basil
1 tsp sea salt
1/2 tsp pepper

To make the dressing put all of the ingredients in a blender and blend until combined. To assemble the salad chop the lettuce and set aside, chop the rest of your vegetables and feta and put in a bowl and toss to combine. To plate add lettuce to the plate and top with the tossed feta and veggies and drizzle with dressing. Now grab a fork and dig in!
