As the days are staying light out later and whispers of spring are in our ears, peaches popped into my mind. Now fresh peaches are not in season yet, however Alpha and I were at the grocery store and I saw a jar of peaches in white grape juice. The wheels in my brain started turning thinking about what I could do with them. Nothing really crazy, we’re gonna do something simple and sweet. We’re going to take the peach halves and grill them and then top with some cashew milk vanilla ice cream and a homemade blackberry syrup.
Grilled Peaches w/ Vanilla Ice Cream & Blackberry Syrup

This decadent yet simple dessert will have you coming back for more. Start on the blackberry syrup first because it needs to cook for about 30 minutes. For this recipe you can either grill the peaches on a grill or use a grill pan. Since it’s still a bit cold outside we haven’t refilled the propane for our grill yet, so I used a grill pan for this recipe.
Number of servings: 4
4 peaches cut in half
2 tablespoon of grapeseed oil
Cashew milk vanilla ice cream
2 pints of blackberries
1 ½ cups of coconut sugar or any sugar you would like to use
The juice of 2 lemons
Start by making the blackberry sauce in a medium saucepan over medium heat. You’ll want to add the blackberries, coconut sugar, and lemon juice to the pot and stir to combine. Bring the mixture to a boil and then reduce to a simmer for 30 minutes, stirring occasionally.
For grilling the peaches brush your grill pan with grapeseed oil and heat over medium heat. Once the pan is hot, place the peaches on the pan and grill for 4-5 minutes on each side.
To assemble your dessert place two peach halves in a bowl, next add the vanilla ice cream as much or as little as you prefer, and finish off by drizzling with the blackberry sauce.
