Quick Dinner Bites

What is a dinner bite? These are the meals that I make when I don’t want to spend more then maybe 10-15 minutes in the kitchen. I wanted to share a few things that I make that are quick and simple. You can alter them to how you like, basically you can personalize it to your tastes.

Put it on a bagel

One of my favorite things to make that is quick, are bagel sandwiches. You can personlize these however you like. Whether it’s putting a veggie burger on there, hummus and veggies, making a pizza bagel, or maybe some guacamole, sliced tomatoes and vegan cheese, the possibilities are endless! Tonight I made a gluten free bagel sandwich for dinner. It took me about 7 minutes to make. I toasted the bagel, smeared on some Unlox Your Dreams vegan and gluten free cream cheese from Miyokos, which is one of my favorite brands. Next I added a slice of Follow Your Heart vegan smoked gouda and then I sliced up some cucumber, tomato, and onion. That was dinner and it was quick, easy and delicious. You can also throw some chips or have some veggies and hummus to put on the side if you need more food for your meal.

Fantastic Flatbread

Another quick dinner favorite is anything on a flatbread. I’ve taken to pan frying a bread called My Bread, it is a gluten free vegan pita. I then like to transform it into a pizza, or top it with hummus and veggies. Heck, you could throw a flatbread party and have everyone choose their own toppings and then see whose turned out the best and whose turned out the worst.

A recent concoction I came up with was an olive tapenade snack bread that you cut into triangles and serve as an appetizer. This takes maybe 10 minutes to make. You just need a little bit of olive oil to cook the flatbread in. First cook it on one side for a few minutes and then flip it. Once you flip it, sprinkle the bread with chili powder, garlic powder, sea salt and then spread on the olive tapenade. Let it cook for a few minutes then remove from the heat, grab a pizza cutter and cut it up and stuff that in your face and in your friend’s face too. It’s super good and you’ll want to make it all the time. I might actually make a short video soon for this yumminess.


A different sort of waffle

Another thing I sometimes make are waffle pb&j sandwiches. The laziest of lazy meal! Grab two gluten free vegan waffles, throw them in the toaster and then add your favorite jam/jelly and nut spread. I’m a big fan of sunflower butter and raspberry jam myself. This could be served for breakfast, lunch or dinner.
