It’s been raining so much here in Michigan that everything has become a vivacious veil of green. Today was the first sunny day we’ve had in quite some time, twas a beautiful day. With all this rain, I’ve been indoors a quite bit. There are a few things that I enjoy doing when it rains and I’m sequestered inside. One is to curl up with a book and the other is to eat lots of snacks.
Most of the snacks that I gnosh on are pretty simple things. This time of year I’ve been eating a lot of fruit; cherries, apricots, donut peaches, regular peaches, grapes, pineapple and more. I also love hummus, whether it’s homemade or store bought, grab some veggies, pita bread, or chips and dip them in there. I’m partial to the rounded crinkle cut carrot chips with jalapeno hummus, little bit of sweetness from the carrot and the heat of the jalapeno is just right. Other things I like to snack on from the pantry are raw nuts; cashews and almonds are a few of my favs.
Slightly More Effort Snacks
Now for a little more effort forward snackiness here’s a couple things I like to munch on. I’ll take a gluten free tortilla put that in a pan with a little olive oil, sprinkle it with vegan cheese and some veggie toppings, cook it till the cheese melts and then cut it into triangles for gluttonous mouth stuffing. Another fav is roasted brussel sprouts. I like to make big ass batches of these! Grab a bag of brussels, slice the brussels in half and toss them with some olive oil, maple syrup, salt and pepper, bake at 400 for 20-25 minutes. These are great hot or cold. I like to eat them the next day; just toss them in a bowl and get your snack on.
