When the mood strikes and I find myself craving something on the sweeter side, I want something that isn’t a lot of hassle to make. This vegan chocolate pudding is made of four ingredients and the sauce has three. The sauce is boss, but if you wanted to skip it you could, the pudding is good on its own but the sauce gives it that extra oomph.
Chocolate Pudding with Blood Orange Cranberry Sauce
This pudding is made with avocados, now that may sound weird to you but don’t knock it till you try it. It’s luscious and decadent and hits you right in the sweet spot.

You’ll want to start your sauce first because it will need to simmer for a bit. The pudding can be made in a matter of minutes.
Blood Orange Cranberry Sauce
1 cup frozen cranberries
1/2 cup coconut sugar (you could also use cane sugar in place of the coconut)
The juice of 2 blood oranges
Over medium heat add cranberries and coconut sugar to a saucepan and stir to combine. Cook for about 2 min then add the juice of the blood oranges. Bring to a boil and simmer for 20 minutes. Turn off sauce and remove from heat.
2 avocados, chopped
1/2 cup cacao
1/2 cup maple syrup
1 tsp vanilla extract
Add avocados, cacao, maple syrup and vanilla extract to food processor and blend till smooth. That’s it! Your delicious pudding is ready to go. Drizzle some of the blood orange cranberry sauce on top and enjoy.
