Watermelon Cucumber Cooler

The other day I went to the store and bought a watermelon. To be honest I only wanted a quarter of one but all they had were whole ones, so I bought one. I still had half a watermelon sitting in the fridge and had been trying to figure out what to do with it. Then it hit me, let’s turn that juicy deliciousness into a beverage.

I wanted something that was cool and refreshing with a bit of a kick to it so I added some cucumber and ginger to the mix. It turned out to be a little bit sweet, a little bit cool and a little bit sassy. You could also add vodka to it and have an awesome cocktail.

Watermelon Cucumber Cooler

Prep & Assembly Time: 5 mins

Number of Servings: 1

Ingredients:

3 cups watermelon, cubed

1/4 cup cucumber, sliced

1/4 tsp fresh ginger, grated

1 tsp lemon juice

6-8 ice cubes

Mint for garnish

Add all of these ingredients to the blender and blend until well combined. Add mint for garnish and if your feeling fancy you could cut out some watermelon hearts to go along with your cooler. Enjoy!
